Ingredients (12 bars)
- 1 cup peanut butter (creamy or crunchy)
- ½ cup honey or sugar-free syrup (for lower sugar)
- 2 cups crispy rice cereal (or puffed rice)
- ½ cup chocolate chips (milk, dark, or sugar-free)
- 1 tsp vanilla extract
- Optional: pinch of salt
Instructions
1. Prep pan
- Line an 8×8 inch pan with parchment paper
2. Make peanut butter mixture
- In a saucepan over low heat, combine peanut butter and honey/syrup
- Stir until smooth and warm
- Remove from heat and stir in vanilla extract
3. Combine with cereal
- Pour peanut butter mixture over crispy rice
- Stir until cereal is evenly coated
4. Press into pan
- Transfer mixture to prepared pan
- Press down firmly with a spatula
5. Add chocolate topping
- Melt chocolate chips in microwave or double boiler
- Drizzle over the top and spread evenly
6. Chill
- Refrigerate for at least 1–2 hours
- Cut into bars once set
