Here’s a foolproof way to make crispy, juicy chicken leg quarters in the air fryer
Ingredients
- 2 chicken leg quarters
- 1–2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Optional: dried herbs (thyme, rosemary, oregano)
Instructions
1. Prep the chicken
- Pat leg quarters dry with paper towels
- Rub with olive oil
- Season all over with salt, pepper, paprika, garlic powder, onion powder, and herbs
2. Preheat air fryer
- 200°C (400°F) for 3–5 minutes
3. Cook the chicken
- Place chicken in the basket, skin side down
- Cook for 25–30 minutes
- Flip and cook another 20–25 minutes
- Internal temperature should reach 75°C (165°F)
4. Optional crisp-up
- If skin isn’t crispy enough, cook extra 3–5 minutes at 200°C
Tips
- Don’t overcrowd the basket → air needs to circulate for crispiness
- Patting chicken dry is key for crispy skin
- Marinate for a few hours or overnight for more flavor
Flavor Variations
- Spicy: Add chili powder, cayenne, or smoked paprika
- Garlic Herb: Mix minced garlic + dried herbs in the oil before rubbing
- Lemon Pepper: Add lemon zest and cracked black pepper
Serve With
- Air fryer roasted potatoes or sweet potato fries
- Steamed vegetables or air-fried Brussels sprouts
- Simple salad for a lighter option
