Air Fryer Eggplant Pizza
A low-carb, crispy, personal “pizza” made with eggplant slices instead of dough.
\\ Ingredients (Serves 2–3)

1 large eggplant

1 tsp salt (for sweating, optional)

1–2 tbsp olive oil

½–¾ cup pizza sauce

1 cup shredded mozzarella

2–3 tbsp grated Parmesan

½ tsp Italian seasoning

Optional toppings: pepperoni, sausage, mushrooms, olives, fresh basil, red pepper flakes
Prep the Eggplant
1️⃣ Slice

Cut into ½-inch thick rounds.
2️⃣ Optional: Sweat for better texture

Sprinkle with salt and let sit 20–30 minutes.

Pat dry (removes bitterness & excess moisture).
3️⃣ Brush with Oil

Lightly coat both sides with olive oil.
Air Fry
1️⃣ Pre-cook the slices

Preheat air fryer to 375°F (190°C).

Air fry slices 8–10 minutes, flipping halfway, until lightly golden and tender.
2️⃣ Add Toppings

Spoon sauce on each slice.

Add mozzarella, Parmesan, seasoning, and toppings.
3️⃣ Melt & Finish

Air fry at 375°F (190°C) for 3–6 more minutes
until cheese is bubbly and lightly browned.
Extra Crispy Tip
For firmer “crust” texture:

Dip slices in beaten egg, then coat lightly in seasoned breadcrumbs or almond flour before the first air fry.
